Blue Lagoon Cream

Blue potato, blue cheese & bacon cream soup

8 slices bacon - cut into small pieces
2 onions - chopped
3 cloves garlic - chopped
1 large leek - chopped, white and light green only
1 cup chicken broth
1 can evaporated milk
1 tablespoon blue cheese - crumbled
8 blue potatoes - chopped
Salt & pepper - to taste

How to make:

1. In a large pot, cook cut bacon until well done. Remove bacon and set aside for later.

2. Add onions and leeks to bacon fat and cook until starting to caramelize.

3. Add garlic and cook until onions have caramelized.

4. Add chicken broth, milk and cheese - bring to a boil.

5. Add potatos and let simmer until potatoes are soft.

6. Add salt and pepper to taste.

7. Remove from heat and allow to cool.

8. Blend with hand blender until smooth.

9. When ready to eat, slowly bring soup back up to a boil.

10. Transfer soup to serving bowls and sprinkle with bacon and blue cheese.
